Choosing hops

    People have dry hopped for centuries without really experiencing noticeable infections. Hops suppress certain bacteria (gram positive, I think). Add to that, your fermented beer has little or no simple sugars remaining, and the alcohol serves to suppress bacteria, and there is low possibility for infection. Plus, your dry hopped beer is so delicious you drink it all before the bacteria ever has chance.
