I recently came across a bunch of dusty, forgotten bottles of Fantome- Hiver, Noel, and Saison. The problem is they have probably been sitting on a store shelf for at least 2 or 3 years now and all have a similar amount of chunky sediment floating in them, a lot. Looks kind of like my first homebrew where I didn't use a hop bag to dry hop. I found some very old bottles of Guava Grove once that had the same chunky stuff in them and they had turned into very sour, but delicious versions of their former self. I'm sure this is just from being stored in less than ideal conditions for a few years, but my question is what is this stuff? Why does it happen and will these fantome bottles taste more sour, or more like a tire fire?

Chunky Hiver was my nickname in high school.

As far as I know, you never know what you're going to get out of a bottle of Fantome. Probably just yeast. Won't kill you. Buying and drinking it would be an adventure as far as I'm concerned. I'd pick up at least 1 and try to bargain for a discount because they look weird.

I've actually been looking for a "special" bottle of Fantome for the past few months. Every bottle I see in the store looks fine when I move it around. I would think it would look a little more viscous in the bottle too, right?
