Citra Belgian Blonde critique

    5.5 gallons

    5 lbs belgian pilsner
    3 lbs belgian 2 row
    .50 lb vienna
    .25 lb Munich 10L
    .50 lb white wheat
    4 Oz aromatic malt
    4 Oz honey malt

    90 min boil
    .50 oz saaz 60
    .20 oz citra 15
    .25 saaz 5
    .50 citra flameout

    Yeast: Conan and Ommegang belgian yeast culture blend

    Mash 150F 60 min

    Ferment 68F up to 74F over a week

    Doesn't sound that appealing.

    What are you going for here? Citra will completely overpower the saaz, and I just don't see it melding good with your yeast choice... whatever the blend may be there.

    Have you had saaz/citra combo before? I've used both as single hop beer (citra dry hop saisons are great) but not sure about the combo.

    Citra is fruity and saaz is spicy and earthy. Thought the two would balance out and make for a flavorful beer. I don't want the hops to be too present. The belgian yeast and malts should take center stage.

    I would simplify the grain bill for starters, unless you're just trying to use up some stuff you have lying around. As others have stated, I wouldn't use that hop blend. Go with just Citra. I'd also just use the Ommegang culture if you're going for Belgian.

    7 lbs pilsner 64%
    1.5 lb rye malt 13.7%
    4.8 oz carawheat malt 3%
    3.2 oz rice hulls 2%
    1 lb clear candi sugar 9.1%
    12 Oz local savannah GA orange blossom honey in primary after high krausen

    .5 Oz saaz 60 min 6.8 ibus
    .5 Oz saaz 10 min 2.5 ibus
    1 Oz citra hop stand 30 mins 15.6 ibus

    Misc
    .5 Oz coriander seed 5 min
    .5 Oz orange peel, bitter 5 mins
    .5 Oz Irish moss 15 min

    Yeast
    Ommegang Hennepin Saison bottle cultured yeast, 1.5L starter

    Mash at 150F 60 mins
    Ferment at 74F-78F 4 weeks. Bottle conditioning 2 weeks.

    If you want to save some money substitute clear Belgian candi sugar with table sugar. If you're not trying to add color and flavor clear candi sugar is just expensive sugar.

    Thanks! Is the 1 lb sugar and 12 Oz local orange blossom honey too much sugar?

    Based on my use of Saaz in the past, I would guess that you could double the amounts of Saaz and still not get much relative to the Citra. If you really want to go with this hop combo, I would think about doubling the Saaz and halving the Citra.

    Not sure if this is directed at my post above, but I meant 1oz Saaz at 60 and 10 and .5oz Citra at flameout IF you decide to pursue this combo (I personally would not).
