Citra/Galaxy Recipe Suggestions

    I have four oz of Citra pellet hops and two oz of Galaxy pellet hops as well as two vials of California Ale and a dry pack of US-05. I would think that would be a good combo, but I'm very new to all of this. I also have a bottle of Bug County and some dregs of Cantillon/JP if you think I should use that, but I don't mind waiting to use that with a more traditional sour later on. I can pick up just about anything else at my LHBS. Suggestions?

    What kind of beer are you wanting?

    Citra and Galaxy are similar profiled hops, so they'll work together in anything really.

    Pale Ale, IPA, or save some and make a hoppy wheat, or even saison if you want to get some other yeast to do that type of style.

    Honestly, I'm kind of open to anything. I've only brewed a few batches so far - a brown ale, Two Hearted Clone, and a Kern River Citra DIPA. All turned out really well.

    Well, then, I'd say a simple pale ale that moves closer to an IPA would be fine, and you'd not have to get anything other than a grain bill together with what you have.

    Try this, it's a tasty pale ale recipe I have for all Citra, but Galaxy would roll really nice in it. Almost IPA like, but has some sweetness from the crystal to level it off a bit.

    88% Pale Malt
    6% Flaked Wheat
    4% C-40
    2% C-60

    Mash at 151* for 60 min.

    1 oz at 15min
    1oz at 10min
    .5oz at 5min
    .5oz at 1min
    1.5oz @ 0 min, or wait until the wort gets to around 180* and add the hops, stir it around and wait 20-25 min before chilling down all the way.

    Then a 1-2 ounce dry hop for 7-10 days.

    Use some Chico/US05/1056/WLP001 to ferment it out.

    Should be around 1.058 OG, finish around 1.010-1.012, and have around 40-50 IBU's.

    I was thinking about doing a simple Pale Ale next anyway. I really want to get my equipment dialed in, pay more attention to boil-off, trub loss, etc. I'll use the Galaxy to dry hop and I'll use my US-05. Is there anything I can do to make this have a bit of a drier finish?

    Lower your mash temp to 148 or 149 F.
