For those who have done clarifying the gelatin, how long does it need to sit before it's good? My latest project is in it's 4-5th day with jell-o.

a few. maybe more than a few. time + cold = bright beer. so keep it really cold and you'll have bright beer faster. honestly never timed it, but after maybe 5 days the beer is noticeably clear. scary clear even.
    Cheers.

Depends of temp you're cold crashing at, the colder the quicker. If you CO2 flush the keg before and after adding the gelatin and shake the shit out of it, that will help as well. 2-3 days.

I consistently get almost disturbingly clear beer in two days. By day 7, it's invisible, so you can't tell where you spilled it. It takes longer for some, but it works. Just be patient.
