clean out the freezer IPA

    I want to make a big IPA to clear out some room in the freezer as hops are taking up as much space as food right now. I was thinking of 2-3 oz of like 7 varieties. These are the 7 I had in mind:

    chinook 13% simcoe 13% cascade 5.6% Summit 16.6% Citra 10% Centennial 10% Apollo 18%.

    Would this make a good beer of jumbled mess?

    Probably pretty jumbled.. But go for it.

    I'd cut the varieties down in half.

    I've never used Apollo, but otherwise I don't see any obvious flavor clashes here. I say give it a shot if you're up for an experiment.

    I've done around 6 myself, and while "good", it was a bit muddled and no real great highlights.

    That said, most of the hops you have there would roll well together.

    I'd just use the summit to bitter, as it's oniony to me late in the boil. The rest would be good. Apollo is danky and earthy, and the Citra will be potent enough to drown out the Cascade, but all the rest would be damn good in a huge hopstand.

    Try it out if you want. I think the Cascade would be lost with those big guys in the boil, but the rest can hold up.

    I'll be using apollo for the first time within the next two weeks, but I wanted to pass along that several people cautioned me against using more than an ounce or two as it produces some unpleasant cat pissy flavors

    One man's 'jumbled mess' is another man's 'complex hop profile'. Go for it. I'm not familiar with Summit or Apollo but I agree with FATC1TY's opinion that the rest would make a dynamite combo.

    I've used it in the last couple beers, and I don't get the piss flavors. It's very dank, and skunky, with slight citrus and armpit.

    I did a single hop DIPA with Apollo that used a full pound for a five gallon batch. It was a weed, cat piss, armpit, grapefruit bomb.

    Apollo is a pungent enough hop that I can pick it up instantly, even when used as a first wort hop (had a barleywine bittered with 5 oz Apollo , is still dank even at a year out.

    When used in moderation I pick up some light tropical fruit, but mainly grapefruit and weed.

    I used it in a DIPA with Columbus, Simcoe, Centennial, and a tiny bit of Apollo in the boil.. Hop extract to 100 IBU's and mash hopped 5 ounces of Chinook. 10 ounces in boil, and then the extract. Apollo was 1 ounce total in the kettle.

    I can STILL taste the dank/skunky aroma of the apollo.

    It sounds like you are thinking 15 - 20 oz of hops (5 gallons?). How big of a beer are you thinking? Any idea for a grain bill? I don't know Apollo, but I agree with the others that there is nothing obviously wrong with the other hops, but I suspect you could make an equally good beer with 10 oz of 3 of the hops. At a certain point, you are just throwing hops a way, 7 varieties is probably past that point.

    Mash hop some of it if you don't particularly care for it, or care about using it up.

    I like the mash hope, gave the wort a great aroma and some bitterness I could taste right from the mash tun.

    I managed to use up some old Chinook that way that I wasn't going to use.

    Thanks everyone. I think it'll be an interesting experiment, if nothing else. I'm going to brew it in a few weeks.

    I think I'm going to sub out the Apollo for some palisades. I'm not going for armpit in this particular beer

    One of my buddies, who's a national judge and teaches our off flavor class, loved it. He keeps asking me when I'll make it again. As a contrasting opinion, I was not a fan, and named the beer "Rim Job DIPA".

    A friend of mine did a smash Apollo and it was the best beer he did IMO. After aging a month or so it had a slight anise, black licorice thing going on. But not in a bad way. I kinda like Apollo.

    Apollo is a nice hop for sure. There are plenty of hops that are good, but I'm very careful with how I use them.

    Summit, Apollo and Comet are the three that come to my mind.
