Closed transfer question - racking cane depth

    Do you "pre-set" the depth of the racking cane before placing the cap on the carboy? Or do you insert the cane to a little below the water line and extend as you go?

    I extended it as I went on the first go around and after that, I left it set and don't plan on moving it. However, larger gravity brews will dictate that. For the most part, I plan on letting it sit.

    Thanks @CADETS3 Anyone else down with the closed transfer? How do you do it? What is your procedure?

    I bought 2 stainless racking canes that came with a stainless plug to put on the end, just like the black plastic ones to minimize pulling straight from the bottom. I think that mine measure almost 1.00" tall. You could measure that and eyeball the height of the trub. Or push it all the way down, pull up an inch after hitting the bottom. Simple.

    Ya, I was thinking of eye balling it before applying the cap and advance if I need to. My plastic racking cane came with a similar cap on the end. I was really curious how others did their transfer as well. Not just setting the racking cane depth, but over all procedure. Some people do it completely closed with a valve on one end. Some have their air coming out through a hose submerged in star san.
