Clove vs Coriander

    We do not use Wyeast 3711 in Tank 7. I would say it's closer to 3787. We use the same yeast strain to ferment Tank 7 Farmhouse Ale, Long Strange Tripel, The Sixth Glass and Dark Truth. We're definitely seeing 4VG produced during fermentation.

    Coriander hangs around and clove steps around. One is delicate and one is bold.

    Tank 7 is not spiced.

    Thanks for clarifying the yeast used to brew Tank 7. I use 3787 a lot (about 4 batches a year). I have never specifically noticed any "clove" in my beers using 3787 but I do get a lot of other phenolics in these beers.

    Do you personally perceive "clove" in Tank 7?

    Yes. "We're definitely seeing 4VG produced during fermentation." 4VG presents as clove-like. I don't think it's a dominant flavor, but it's there. For me, the star of Tank 7 is more of a bubblegum flavor/aroma contrasted by the grapefruit/citrus character of Amarillo hops.

    Do you conduct a ferulic acid rest as part of your mashing regime?

    Try almost any Hefe and you will get a big whiff of clove.

    We're mashing in a bit higher than that. The lowest rest for any of the beers I mentioned is 60 C.

    Good stuff in here, thanks all. Funny because for me the clove/spice flavor was very prominent, as much so as the citrus.
