Co-Pitching High Gravity Strain

    Using WY1469 as one of my “house strains” due to top cropping ability. Occasionally I make a high gravity beer and barrel age. WY1469 abv tolerance is 9% per WY.

    Anyone gotten WY1469 above that?

    What would co-pitching look like? For instance if I wanted the fermentation character of 1469 but wanted to make a 13% Imperial Stout?

    Could I ferment with WY1469 x3 days then pitch a big slurry of a yeast like San Diego Super Strain after 3rd day? This way get the esters I want and also the attenuation and abv?

    Any thoughts on this are much appreciated.

    I do something along these lines here and there. Works for me.

    So what I plan to do is make a big yeast starter of WY1469, then on brew day collect a liter of high gravity wort, dilute it down to 1.060 with distilled water , make a San Diego Super Strain starter from that and then pitch that on day 3 after I get some 1469 eaters. Sound about right?

    I'd just as soon pitch a big starter of the 1469 and the vial of San Diego, no starter.

    I think I see what you are trying to accomplish by making the San Diego starter, trying to have it active when exposing it to a high alcohol environment. Trying to make sure that 1469 ferments everything it can before giving San Diego a shot. @MrOH has a simpler idea that might achieve what you want. I can’t decide which has the best chance of succeeding. I want to say that your approach should maximize the 1469 contribution and the other approach maximizes the odds that San Diego completes the fermentation. But really, just conjecture that probably requires experimentation to sort out .

    I'd recommend this approach. Maybe even underpitch your primary strain a bit to encourage more ester production.

    This would certainly produce a more neutral beer, as 090 isn't a big ester producer and the big starter of 1469 would limit its ester production.
