Coconut Coffee Brown Ale

    morning, I added 2 lbs it toasted coconut to my brown ale after secondary... It's been 1 day and the coconut nose and taste is outstanding but my beer went into a slow fermentation (air lock going up and down). Should I pull off the coconut and add the coffee to taste or put the car boy in the beer keg to stop fermentation?

    I would pull the coconut now if you are happy with the taste as it is. I've never added coconut to a beer but 2 pounds sounds like a lot and is be worried that another day might be severe overkill. (I could be wrong.) I would add the coffee to taste right at packaging. Good luck and report back.

    I do coconut at the same amount in a brown ale. I typically let it go a week. You may also want to add a vanilla bean or two for the duration. Coconut really don't taste like what we think it should without the addition of vanilla.

    The coconut will fade away some after you pull it, I'd leave it in for a week or so at least.

    Afternoon here are the results:
    Did a 48 hour cold stable after adding the 2 lbs of toasted unsweetened coconut. To my surprise the coconut fell to the bottom avoiding a dry cap. The nose and flavor of the coconut was so great I pulled it from the cold stable and double racked into the keg. I then completed my coffee blending trials. The winning blend was: 12 scoops fresh ground high end coffee brewed to 6 cups of water(strong coffee flavor less water to add to the beer) added to the remaining 4 gallons of the finished coconut brown ale. Tasted amazing flat can't way for the finished CO2 product in 3-4 days when force carbonation is complete.
