I know I've been a pest lately, but bear with me. I brewed up a coffee stout yesterday afternoon and dumped it into the fermenter. This morning I open up my closet and can smell the Saison immediately. If I get close enough to the airlock, I can smell the coffee. Is this normal? I'm assuming it's just the plastic holding the smell of the Saison.

Fermenting beer can have lots of different aromas (good and bad), but if you are smelling a Saison instead of a coffee Stout you might want to check your sanitation or yeast selection. Some people might consider that a good thing

I cleaned the fermenter and sanitized it before use again. But as the Stout is fermenting, I'm smelling the Saison yeast.

What temp are you fermenting at? If it is too warm you may be producing some esters and phenols you normally would not get if you were fermenting cooler with the same yeast.

Did you use a saison yeast? If not what variety? What's the temperature of the fermenting beer?

No, Safale 05 Ale Yeast. It's at about 72 degrees.

Note: I did use a saison yeast for my last brew.
