It's very simple to do. The controller in the link that other guy provided will work but you can get them much much cheaper on amazon.

Your overthinking this, although it is probably too late, all this mental gymnastics of having too much beer and less than ideal storage options could have been solved easily, don't buy and trade so much beer!

Put a moratorium on buying beer and start drinking the shit out of what you have. Your storage needs will go down. I know it is cool to have bottles, but it reaches a point where it becomes absurd.

Really? I was going to suggest building out an industrial walk-in

Go vertical or go home! Time to start stacking.

I'm using a 5 cubic foot chest freezer, pretty small profile, cost under $150 and fits fine in my Manhattan apartment. If you are creative it doesn't take up much more space than the bottles themselves, but getting to the stuff in the bottom is a bit of a pain. It isn't perfect, but compared to a comparable capacity wine fridge it is great value. If the OP is storing 250+ 12 oz bottles, might need to go up to 7 cubic feet, but still not so huge. The extra cost on the wine stat (and I am storing mostly wine) is based on an extra fail over with a freezer so if it fails it can still kill the cooling cycle to not go down to freezer temp.

the vibration in regular (not $$$$ high end ones) wine refrigerators means that real collectors say you can only keep wine in them for a few years, not sure what that means for beer.

Yeah for beer I think you're talking about a big fridge worth of ol' drain pour

Off topic but what is a good temperature to store beer in? Considering it's not in a fridge and in a dark area away from sun.

60F or below, preferably. I miss that completely as my closet usually clocks in around 72-75, which is why I'm giving up cellaring in my apartment and drinking what I have and using the extra space for home brewing.

Beer (even aged beer) is for drinking. You could drink 2 bottles from your cellar a week and you wouldn't run out of beer for about 3 years.

This seems like the logical solution, rather than figuring out a way to spend money to constantly ship and store beer when you're cash strapped.

Considering it wont be in a fridge then that would be impossible for it to be under 60f, what room in the house can you consistently keep at 60 especially in the summer. The last few week i have been storing in a closet away from the sun and its been holding fine.

Beats me -- I was parroting the number I see quoted most often for cellaring, suppose I should have clarified. The truth is you can* store beer at any temperature, but the cooler it is, the better. Find the coldest spot in your house and keep it there.

*can being the operative word. You definitely don't want to store it next to a boiler or dryer, of course.

I live in an apartment with not a ton of space and store my "cellared" beers in a box in my closet. I don't have any crazy 10 year old lamics or anything but for my needs its been more than fine.
