Combo Cellar Closet/Regular Fridge

    Looking for a little feedback on this proposition:

    My current Storage(not going to say Cellar as my oldest bottle is BCBC '10) is a regular fridge set to the warmest, I estimate 40 degrees ish. It holds 48 12oz and 40 large format.

    I have it at capacity right now and am expecting to add another 40 or so bottles in the next month will all of the releases.

    We have a free shelf in the pantry that would stay around 70 year round.

    Will there be a negative effect if I remove a portion of the cold stored beers to the pantry, those that I plan on drinking in the next year?

    Also, if a beer spends a year at room temp, and then goes into cold storage, will it be too late to salvage the beer.

    We are talking 50% BWs, FW boxed beers, a variety of imperial stouts, and a handful of sours.

    No, but they will age faster in the pantry.

    The "damage" will already have been done - it would have aged at an accelerated rate.

    Your beers aren't really being cellared right now - spending time at 40F causes the yeast to go dormant and won't change the flavor of the beer much.

    If you really want to cellar your beers and have them age well, you need to do it at a warmer temperature. Too warm, and they age too fast.
