Complete fermentation under 4 days?

    Thanks to JackHorzempa and his well written article, I learned some other mistakes I made.

    1). Didn’t properly oxygenate. Thought the high position, draining and splashing from going from kettle to fermenter was sufficient

    2). My yeast was designed for 1.060 or less OG and although it chewed through 1.072 it probably produced more off flavors

    3). As suspected my yeast pitch viable cell count was a little below what northern brewer recommends.

    4). Didn’t add any yeast nutrients. I have some on hand but i think it’s just diammonium phosphate. May need to try a nutrient yeast blend with zinc in it.
