Condensation inside my finished beer?

    I see condensation inside some of my recent homebrew bottle necks. I put half of my final product straight in the fridge after bottle conditioning (about 1 week), due to limited fridge space, the remainder stayed in my closet for an addition 2-3 weeks. It appears the condensation problem is primarily in the beers that went into the fridge first.

    Any ideas why this happened? The beers with condensation inside definitely taste a little off.

    It's probably "off" because 1 week isn't long enough to properly bottle condition. Sure, it might be carbonated, but two weeks is about the minimum to let the flavor round out.

    It is possible the beers at warmer temperature storage have matured a bit faster than the other, so give the colder ones more time. There“s no problem in regards condensation, forget it.

    I'm new to homebrewing so my ability to tease out exact off flavors is weak currently. I'd say I tasted a slight unexpected fruity/esther like flavor.

    I brewed a 100% centennial hop IPA (extract kit).

    High esters are dependent on the yeast strain and/or high fermentation temps. But I wouldn't expect that to affect only half of a batch. Are you sure it's not sugar sweetness you're tasting? One week isn't usually enough for full carbonation. If it wasn't finished, there would be unfermented priming sugar in your beer.

    ETA: When you say fruity, is it like green apple?

    To me, it's sweeter than green apple, but a bit harsh, almost boozy. It's light, my brother doesn't taste it, but I'm picky with my beer.

    Did you taste the beer just before bottling? Is this new taste different?
