    But CO2 molecules are still denser than air...next time you are in your garage, go look at your water heater...there is a reason that code requires it to be off the floor. (gasoline molecules are also heavier than air)

    And yet gasoline fumes don't keep O2 away. If they did, there would be no danger of igniting the fumes.

    I don't think anyone disputes that having CO2 in your carboy lessens the concentration of O2 that touches the beer, but O2 will still touch the beer either way. A CO2 "blanket" is just a layer that has a lot CO2 in it, not a layer that doesn't have O2 in it.

    So you are saying there is no "I" in team, but there is "O2" in CO2!

    On a more serious note: What if step 9 was never performed? If you don't open that valve back up, the collection ball is just sitting on the bottom and no oxygen would be introduced.

    The product actually looks like a great way to collect yeast and/or get your beer off the yeast without racking to secondary. This product doesnt make much sense if you are only doing a primary fermentation. Also, as someone else said, temperature control is an obvious flaw in the design and size.

    The omission of step 9 would indeed be prudent. Removing the yeast ball no more than once is a valid strategy.

    Of course, this doesn't mean this product is worth buying. Let's not forget you can't easily beat the wort with a big egg beater for the purpose of aeration! The failure to recognize the importance of this issue could be detrimental to the quality of your beer.

    Yeah, I have one, but it sounded like you had a plan to add a trub collection valve to the bottom? Never thought about doing something like that. My Dad welds SS tanks for a living, so I thought if you had a plan worked out maybe I could talk him into implementing it. :slight_smile:

    Add a valve to the bottom and a CO2 port to the lid, and you could blow your yeast out without introducing any O2.

    The SS is pretty thin, but I think a small (weldless) bulkhead valve will work quite nicely

    Good luck adding that bottom valve without screwing up your $225 steel bucket.

    Go all the way or go home. Temp control, top and bottom racking ports, optional pressurized transfer rig (which I have), optional blow-off kit (which I have).

    Get the 14 gallon conical if you're really serious (I'm only 7 gallon serious).

    I'll probably get the butterfly valve stuff too eventually.

    Pressurized transfer fitting. Uses TC onto the original fermenter lid.

    Get the blow-off kit too. Get some silicone hose to go with it. 5ft is good.

    How are you liking this set-up? I am thinking about biting the bullet and do the same.
