    I realize that this may be splitting hairs, but craving something is purely psychological. If what you mean by "crave" is "what our nervous system is programmed anthropologically to prefer" then I'd agree.

    Species tend not to evolve into dumber, less capable versions of themselves.

    Although I share your opinion, simple people prefer simple flavors and aromas. The crispness and bitterness of a Pils is not simple. The estery and phenolic nature of even a Hefeweizen and definitely of traditional Belgian Abbey/Trappist style beer is even less so.

    Proper IPAs were aged for a year or more before being shipped to India.

    No genuine IPAs have been made for a long time. For about a century it was another name for Bitter , often the weakest one brewed. But of course IPAs was generally the weakest beer anyway.

    Yes, that's true. I suppose you're right. I do see a plethora of fresh pilsners and such all the time now, which makes me happy. I just think it's sad that quads and such are overlooked in favor of the newest NEIPA, but you know what? That's always been the case with new, popular styles. I still remember when old guys griped about West Coast IPAs overshadowing the popularity of Belgian styles. And hey, maybe that's a good thing. The less the haze bros go after saisons, tripels, and quads, the more there are for me! :sunglasses:

    I had family from the Finger Lakes out visiting last week. We took a day trip to Port Townsend, and hit Propolis Brewing. They had a Quad aged on Juniper berries that was awesome.

    They're a very unique brewery in general, and now, having visited, they are on my must-hit list when asked about best WA breweries.

    Oktoberfest (both the style and the celebration) makes autumn a great time for beer; pumpkin ale ruins it.

    So . . . sort of a Sahti/Quad hybrid? I'd be up for sampling that. Of course, I love gin, so it probably would agree with me completely.
