Cook with good beer?

    Abt 12 is very good...Westy has more pronounced toffee and plum...where the Abt12 is more malt forward lacking some of the layers of west...but I'm pretty happy knowing I can get an Abt12 without going to belgium.

    I would use good beer to cook but I wouldn't use a more expensive belgian beer. It really depends, if the sauce is going to be reduced then you lose lots of character.

    For braising I like to use Redhook ESB, it's relatively cheap and it's got just enough malt and bitter hops to compliment savory flavors.

    My favorite...PBR prawns...dredge the prawns in flour quickly sautee in butter, add a splash of pbr, cook quickly, remove shrimp reduce beer, pour over prawns, salt and pepper to taste.

    I make beef stew and braised short ribs with Trillium's Pot & Kettle frequently. So damn good.
