the wife whipped up a batch of oatmeal raisin cookies today and they're fucking good. I was thinking of throwing a few in the oatmeal stout i just racked over to secondary. Question Im having is that she used a cup of butter in the cookies and Im not sure what that will do once i keg up??
Fat causes foam retention issues. Also, you'll be adding starches to your beer, which is also not generally a good thing.
I've tried a couple of similar experiments. I did a stout last year with girl scout cookies and have also tried a one gall batch with some donuts. The donuts were not a great idea. The girl scout cookies (samoas) didn't negatively affect the flavor of the beer but didn't add any real flavor either. As VikeMan mentioned they cause head issues and they left a nice little oil slick once the head quickly dissipated. I'd just toast some oats, throw in some raisins or one of the crystals that adds raisin flavors.
Yep, what MCDForm said. There is a microbrewery in the area that does an eggnog stout. But they don't use actual eggnog they make a tea out of hot water that spices that give eggnog the holiday flavor. If I were doing an oatmeal raisin stout I'd probably go with oat flakes in the grain bill, and throw in some molasses and raisins at 5 minutes left in the boil.
Special B is good for Raisin flavor. A local homebrew club member made an awesome oatmeal raisin cookie stout and he said all he used for the raisin flavor was special b.
