Ahnapee Brewing in Algoma has a great taproom and great beer, and while you're up thay way Door County Brewing is really cool too. Live music on weekends, you can bring food in, etc. as well as putting out some really good belgian style beers, as of late.

Skip the waterparks and head to Port Huron in the Dells.

    Milwaukee:
Lakefront Brewery - Awesome atmosphere and really cool fish fry with polka bands on Friday nights.
MKE Brewing - Best tour in town if you're going for pure value. Like $10 and it's 3 hours of pretty much unlimited beer and the tour guides are always fun.
    Madison and area:
Capital Brewing - Has a nice beer garden and pretty good beers.
Union Terrace - Not really a brewery, but a good selection of local brews and one of the coolest atmospheres in the state.
One Barrel - Really cool little nano-brewery in a cool hipsterish neighborhood.
New Glarus - Definitely the definitive Wisconsin beer experience. Just an awesome place.
Hop Garden in Paoli - Cool little brewery with a hop farm. Tours of hops are cool and the beers are super fresh.
    Others:
Potosi Brewery in Potosi, WI - Pretty tasty beers in a small town close to the Mississippi River and a brewery museum with some really cool stuff. The Tangerine IPA is underrated IMO.

MKE Brewing for the best tour hands down, just can't beat all you can drink for $10. Favorite breweries to visit on a regular basis: Central Waters, New Glarus, O'so
