coolship / 100% spontaneous ferm breweries

    i was wondering what breweries in the midwest have a coolship and do 100% spontaneous ferm beers.

    off the top of my head all i can think of is:

    new glarus
    side project
    whiner
    scratch

    To be honest, just the first 4 you mentioned is a lot - to have even more than that is kind of amazing! How many breweries in Belgium are doing spontaneous fermentation these days? And we're talking about just the midwest here? Impressive.

    Pulpit Rock does and is currently working on a collab with Forager using them.

    which side project beers have been 100% spontaneous? Vintage 2014?

    I don't think Scratch has a coolship yet. White Rooster (half hour away in Sparta) has one though.

    Dovetail in Chicago has a coolship and has 100% spontaneous beer currently aging. It will be lambic in style.

    Vintage 2014 and Unblended 40 are (I believe) the only two 100% spontaneous ones. The majority of the blend for PN8 was spontaneous 3 year aged based on the description

    I think Fair State has done a spontaneous ferm beer in the past. but I'm not positive.

    They did a collaboration with Funk Factory recently using FF’s mobile coolship.

    I think that 2nd Shift does but not positive. I am pretty sure that J.A.C.K.E.T.S. was spontaneous which was a collab with Side Project.

    Jolly Pumpkin has brewed 100% spontaneous in the past, Lambicus Dexterius.
    They used an open fermenter as a coolship, according to Ron Jefferies in this article.

    Urban Artifact in Cincinnati has brewed 100% spontaneous, Beipiaosaurus & Pteranodon.

    Are you just looking for ambiently inoculated beers or are you looking for breweries that employ the American version of traditional lambic making, i.e. Methode Traditionnelle?

    Does Allagash have a distro footprint out there? Their beers are consistently solid

    Second this-the coolship resurgam beers I have had from Alllagash have been better or least as good as many Belgium Iambics I have had. Unfortunately the price is still also high- 18 bucks for a 375 ML bottle. I did enjoy every sip though and finished my last bottle thinking it was worth it and how am I going to get more.

    Looking for the Methode Traditionnelle breweries to be specific. I always liked sour beers but have fallen head over heels for traditional lambic beers. I feel it’s where craft meets art meets nature and there is something truly romantic about it for me.
