This is correct. Dan carey told me this fact. From the horses mouth the beer truth spills out!

Golden Canary wasn't made with a coolship, Peche and Premiere Annee were.

If that air makes you create beer like Jean van Roy then bring it on!

Thanks so much for posting that! This is the article that first got me into Lambics way back when. I had an original copy from the magazine, but I've lost track of it. Then it used to be available online, but I haven't been able to find it for the last few years. I'm saving a copy to my local hard disk in case it disappears on me again.

I think you can get an electronic copy of the original through the Sci. Am. Web site, but it will set you back about 7-8 bucks unless you can find some place like a University library to work through.

LOL, Boston Beer Company is the 10th largest U.S. brewer producing about 1.1 million hectoliters a year (this article is from 1996).

Thanks for the offer. Appreciated. I actually have a copy of the article picked up at a garage sale a few years back.

New Glarus Wild Fruit Cave has one of the largest coolships that I've ever seen.

Logsdon does indeed have a coolship. I spoke with Dave about it at brewing school this summer and he said that he expects it'll be a 3-5 year project before they can have a fished product that'll meet his standards. They're also working on expanding their orchards so they can do more fruit beers with only stuff grown on site.

I first heard of coolships when I read about how New Glarus was building one. Since then I have been reading a little about them and the process is fascinating. It amazes me the skill it takes to consistently pull something like that off given all the variables.

Does anyone have any ideas or experience in building one, commercially?
