Cork wants to blow!

    I have a caged & corked sour from Pizza Boy—the cage is really the only thing holding the cork in. Any way to mellow out what's going on inside so this cork can be properly seated?

    Any tips/tricks are appreciated.

    Not a chance, in fact it will likely only get worse as it continues to condition in the bottle. Safety first when you open that bad boy!

    Keep it in the fridge and slow down the bio processes within the bottle? That's the only thing I can think of.

    What if Mr. C had a 1/16" drill bit and drilled down the center of the cork? Of course he would need to pull the cork and drink it right after, but this might reduce the pressure and the loss of beer from a gusher.

    Fortunately I have never encountered anything this serious.

    Not seeing any of this with my pizza boy sours though I'll look again tonight, I have 5 in the cellar

    So, actually ended up just drinking. Probably wasn't even that much cause for alarm. Cork was about 3/16 or 1/4" max out of bottle but was a fairly long cork. And wasn't a gusher so, again, no 'real' concern. I had intended to 'work' on it though but it was spotted in the fridge and requested with dinner last night.

    My plan of attack would have been...
    I put in fridge in hopes of alleviating some (or further) gas build up. After a couple days I intended to ratchet strap the cork down (I could manually push it down but it would just ride back up the 1/4") with the thought being that with time (compressed) the bottom flange of the cork might be able to expand back to its original shape and hold it in proper place. I would have secured bottle on a table and ratcheted down to table (rather than just ratcheting on the bottle itself). I know, glass + ratchet strap = risky affair, but I would have padded the table and tightened only enough to get cork down. That was the plan anyway...

    Pizza Boy Mango Sourer is delicious by the way.
