Corked & Caged With Mold?

    Top of th' morn to all of you! So, as you know, warmer weather is upon us, and I recently discovered that my cellaring area of my new house had a bit more moisture in the air than I had anticipated. I had a bit of a mold bloom occurr on the outside of some of my bottles, both capped and corked. I went out and purchased a dehumidifier, and used a StarSan solution to (hopefully) nip the issue in the bud, but not without amother new experience occurring first...

    Had a bottle of circa 2013 RR Consecration that had a light dusting of mold around the rim of the cork, and when I removed the cage to hit it with the sani-solution thr cork began to steadily emerge from the bottle neck. Long story short, I maintained pressure on the cork, pushed it back down without it ever surpassing the 3/4 mark, recaged it and immediately placed the bottle in the fridge with plans to consume later this week. Hoping the contents are still ok, albeit, I'm not afraid of a little extra "earthy" funk. Anyone ever had any similar occurrences? Sound off! Cheers!

    I remember a lambic having that issue. I didn't experience the cork coming loose but there was some mold around the outer edge. Wiped it clean and it tasted good. Let us know when you taste how it is!

    I think you should be fine. I've drank Cantillon bottles that had a disturbing amount of mold underneath the cap and on the top of the cork. They tasted just fine. I also doubt you lost any pressure/CO2 if you did not let the cork come up too much. I have a good feeling it will taste just fine. Report back and let us know.

    If the bottle is still well sealed, it should be fine.

    Thanks for the responses and reassurance! I will definitely report back when I pop the top this Thursday. I guess I never realized how significant of a role the cage actally plays in the corking process. It would appear that the beer has indeed been developing in the bottle with how quickly the cork responded to the change in outward pressure being exerted / maintained by the cage. Cheers!

    i just had a rose de gambrinus with mold under the cap. i was a little worried at first but was relieved after the first sip

    Glad to hear these answers. My parents basement is a little moist. No mold problems yet, but could change..

    I just came upon this post when I noticed some fuzzy mold under one of my Drie Fonteinen Golden Blend bottles.... Got me really scared but I googled it and some wine people say it's ok ... I keep my beer in a converted chest freezer so it's pretty stable of an environment... I see no mold any where else in the chest[​IMG]

    I have to imagine it's next to impossible for mold to get any farther than the outer surfaces of the cork. I'd guess just wipe the bottle off with a damp cloth to get the surfaces as clean as possible before pouring and you'd be fine.

    Just wash it off with hot water and let it dry before putting back in cellar. Pretty much every small bottle of 3F I've had has seen some bit of mold on it. All been fine.

    I opened that bottle of 3F with mold on the outside for the super bowl on sunday... it was excelent... mold was no issue... I NO LONGER FEAR THE MOLD!!! :slight_smile:

    Yea, though I walk through the cellar of the shadow of mold, I fear no evil... Indeed good cork is pretty tough stuff. As long a it's tightly sealed on the wet end of the bottle, you should be good. I have a somewhat embarrassing overstock of lambics in a moist-ish cellar, and mold under caps or cages is not uncommon, but the corks are steady performers. Especially for the Belgians, where they all have to live in moldy basements, in this damp climate...

    I've had more than one 375ml Russian River bottle uncork itself as soon as the cage came off. You should be fine.

    If you are storing in a regular fridge, you may need to turn the temp down below your desired cellaring temp to prevent mold growth. Seems some fridges don't pull enough humidity out at 55° to prevent growth. A box of baking soda doesn't hurt either.

    If you keep on top of cleaning up the mold it shouldn't be a problem. I would be a little concerned if I pulled a cork and saw mold on the inside surfaces. However, sometimes you gotta roll the dice.
