Corn Syrup and HFC

    I'm a complete homebrew noob, and literally making a Chococlate Maple Porter from Brooklyn Brew Shop as I type this (http://brooklynbrewshop.com/directions/Brooklyn_Brew_Shop_Chocolate_Maple_Porter_Instructions.pdf)

    The problem is this - the recipe calls for a maple syrup both at the end of the boil (before chilling) and right before bottling. I just realized that I only have pancake syrup, instead of real maple. So this is not ideal, but I planned on just going with it and expecting some off flavors. But now I realize that the syrup is also being used as the carbonation sugar. The pancake syrup is mostly corn syrup and high fructose corn syrup - will this work, and do I need to make adjustments? Looking for a fast reply! Thanks!!

    Great, thanks. I now see that my pancake syrup has some preservatives (to be used during fermentation). WIll this be a problem? Starting to think I better make a quick trip to the store for some real maple.

    I don't know if the preservatives would be a problem, but why not get the real thing if you can?

    You get out of it what you put in. If you think the ingredients you put in are sub par you will more likely than not end up with a sub par beer. Dont throw anything in there just for the hell of it, make sure its what you want in the beer.

    Also, depending on the preservatives present, they may have an adverse effect on your yeast.

    What are the preservatives used in your syrup? Some food grade preservatives such as sodium benzoate and potassium sorbate will inhibit fermentation. I learned this when I made my first cider, after buying 5 gallons of preserved cider but before pitching yeast.

    Sorry for not responding to everyone. As it turns out, after I submitted the post my wife called me and said was currently at the store and wondering if i needed anything. Perfect. So I got my real maple syrup in the end. Thank you all for the advice.

    Fermentation went wild for the first day or so, but I switched the the airlock today and I'm observing absolutely nothing. I know all us noob brewers worry too much and my beer is probably fine, but I wouldn't mind someone confirming that this is normal?
