Crashed starter - how long?

    Had to cancel a brew day today unexpectedly. How long can you hold a crashed starter in the fridge for? Can I hold it there for a week? Any special revival steps I need to take before use? Thanks.

    I think that you won't lose that much yeast in a week. Beyond that, you might want to do another starter. No I don't have any data, just a gut feeling.

    I would just take it out of the fridge and leave it be until you need it (~1wk). High cell counts are what you want, once they hit the wort they'll take off and go into exponential growth

    I've gone as long as 3 weeks. The lag time is a little long, but it still produced good beers on the several occasions. I'd keep the beer in the fridge until you're about to pitch. It's better to dump cold yeast into warm beer than warm yeast into cold beer. Decant as much of the beer off the top, swirl the glass and pitch like normal.

    This makes sense to me. I'd probably go as long as two weeks, but haven't had to do it before. Thanks.
