Creative use of Cascade - Pushing / Exceeding Style Limits

    Although only my second year of production, my Cascade hops did very well. Thus far I've brewed a harvest ale and now I'm thinking about the usage for the remainder of Cascade. The easy one is an American Amber. Think I’ll steal Brewing Classic Style’s West Coast Blaster (Amber), substituting out whatever Jamil has as aroma hops for Cascade and leave bittering as is. Ok, easy in the box one down . . . how about alternatively doing a non-traditional hop forward Vienna?

    What’s your suggestion for my Cascade usage?

    I've always liked American hops in a strong saison (with Brett which combat's their oxidation a bit).

    Schneider Edelweiss is a slightly stronger-than-average hefeweizen with loads of late cascade hops. It is very unique and one of my favorite commercially available hefes.

    Cascade is versatile. I use it everywhere myself. never too much Cascade aroma imo.

    keep in mind that Cascade has horrible storage ability, even more so if you lack the ability to properly dry and preserve the hop. so use them up sooner rather than later.

    I find American hops do well in most all Belgian styles. I've successfully dh'ed Saisons & Blonds with Citra and Mosiac, Houblon Chouffe uses Amarillo, and The Bruery's Mischief has Centennial. These aren't Cascade . . . but you get the idea.

    The style guidelines are there to be pushed and exceeded . . .

    I had a belgian pale with cascade, it was very good.
