Crooked Stave dregs.

    Anyone use these? I know chads doing mostly 100% Brett primaries but the beers I have probably picked up some extra bugs from barrels. I have 4 beers and I wanna crack one tonight.

    Any experiences are appreciated!

    I've never had any Crooked Stave beers before, so I won't be a huge help. But my guess is the Petite Sour would be your best bet for healthy brett, since it won't have had to handle high alcohol percentages. And Leopold Bros Peach Whiskey is amazing, so I imagine a sour aged in those barrels has to be great as well.

    I have had the Surette, it has other bacteria plus (I assume) multiple Brett strains. It kinda has a Russian River character to it (too much acetic acid). I stepped up the dregs along with my Lambic and Boon Mariage Parfait and they all kicked the starter off fairly quick. Put those into a Flander's Red type beer a few weeks ago. To get straight Brett, pure cultures, you would need to get the Wild Wild Brett series or St Bretta.

    Yea I figured if I grow any of these up ill have to do some sort of sour ale. Which is totally fine. I've grown up la roja dregs before and that beer is too acetic IMO.

    There shouldn't be an issue with using dregs from CS or RR for a sour ale as long you are intent on controlling O2 exposure post fermentation. The acetobacter in those beers needs oxygen to turn the alcohol into vinegar.

    Bringing this one back from the dead.. Does anyone know what sorts of sacch, brett, lacto, bacteria, etc. would be in CS's Colorado Wild Sage Brett Saison? Just bought a bottle and would love to use the dregs in a berliner weisse.

    There's not a lot of 'contact' info on CS's site. Had to email their taproom so I don't know if I'll get a response or not.

    No Sacc at all. CS uses all Brett with Lacto and Pedio for the sours. I believe there are 2-4 Brett isolates in the blend he uses.

    From my understanding everything Chad does is brett, no sacc. But he has more than four brett isolates that are used for CS beers. Last I heard he has over 20 strains in his arsenal.

    I'd kind of feel bad to drink this one and NOT save the dregs now. Was kinda hesitant to buy it cuz of the price, but now I know I'll not only get a delicious beer, but I'll also get some bonus Brett sediment to build up!
