Cucumber Brett Saison

    Anyone with suggestions on trying to pull this off? I have 6 gallons of a basic saison (75% Pilsner, 17% Wheat, 8% Golden Naked Oats) sitting on Yeast Bay Saison blend that I would like to split.

    Half will be getting 4lbs of blood orange. The other half I would like to hit with brett dregs, then transfer onto cucumber to finish out.

    So, I have brewed a cucumber saison, but not a cucumber brett saison. The one thing I would say is that a very small amount of cucumber very quickly imparts cucumber flavor into the beer. I was shocked how little time (maybe a day or two) the beer needed on top of two sliced cucumbers in a 5-gallon batch in order to have a strong cucumber flavor. If you want just a hint of cucumber, I would be judicious. There is no reason you can't add more later if you feel it's not enough.

    If I were doing this (which sounds interesting!) I'd soak some sliced cucumbers in Effen Cucumber vodka: http://www.effenvodka.com/lpa . Only reason I'm saying this type is I've had it before and you get a nice clean cucumber flavor, and not that fake tasting crap. Pour just enough into a mason jar to cover the sliced cucumbers. Try some samples to make sure it's not overpowering, and adjust if necessary. Add to secondary and rack your beer onto that.

    Not sure I would brett it. The earthy and peppery spices from DuPont would seem to play well with cucumber, but the funk or fruity flavors from brett may not, and god forbid you get a bit of tartness to a cucumber saison.

    I do love pickle juice.

    One of the most interesting and best beers I`ve had recently was Picklemania Dill Gose from Haw River Farmhouse Ales in NC.

    I had a cucumber saison from cigar city. It was the worst beer I have ever drank, and I like cucumbers. Others seems to like it though. Weirdos.

    Well Haw River was nice enough to provide a huge amount of information, and there are no cucumbers in their gose. It`s kettle soured with additions of fresh dill, mustard seed, indian coriander, sea salt, and a mix of green black and white pepper.

    Maybe I will hold off on the cucumber saison and give the gose a try.

    cigar city's had a pickle juice thing going which is exactly why I disliked the beer. Trinity brewings electric cucumbah on the otherhand was tasty.

    I actually think soaking the cucumber in vodka is probably a good idea. I tend to be a little reckless when adding fruit and veggies to beer. I soaked the cucumbers in sanitizer, sanitized my knife & cutting board, and then sliced & threw in the cucumbers. I figure the innards haven't been exposed to anything, so they are probably safe, and lots of brewers fruit beers with basically no sanitation. But, vodka would add another degree of safety, and it might actually be good insofar as it would pull some flavor out of the cucumbers and address my big concern, which was how quickly the cucumber flavor manifested in the beer.

    Ha! Count me as one of those weirdos. Love that beer! But then there are many that I can't stomach that others love. Taste is a fickle thing.

    @trevord13 or someone else, did any one ever try the Brett / cucumber combo? I think a funker strain Brett, maybe Lambicus could be interesting.

    I'm going for a Cuke Berliner this summer after trying Jackie O's at EBF. It was a little too acidic for me, but it was extremely refreshing and not "pickle" like at all.
