Cuvée Saint Gilloise

    Is this Cantillon supposed to be drank as fresh as possible? I had two bottles from last year (one of which I drank ) wondering if I should have drank the other already or can hang onto it.

    I think Cuvée de Champions is better fresh because of the dry hopping but I know others like it aged.

    Had it aged a few years, had it fresh, I prefer the softness of it aged

    I like it with a bit of age on it. But since it's lambic, it'll continually evolve in the bottle for however long you decide to hold onto it. So open it whenever you feel it's right!

    This. It's fine, aged. It's just better fresh.

    And, of course, if your bottle is "Cuvee de Champions" it's older by definition.

    I thought it was pretty sharp fresh, but I'm sure a lot of people enjoy it that way. I cut the bite with some St. Marcellin cheese and it was fantastic.

    I bought my last bottle in 2010 and both labels were being used. Not sure about current releases.

    I think the dry hopped lambics from Cantillon (Iris / Cuvee St Gilloise / de Champions) are probably intended to be consumed moderately fresh to fully appreciate the character the fresh hops add to the beer.

    However, we recently had a 1996 Iris and a 2011 Iris and it was pretty unanimous that the 1996 was better mostly because the huge hop character (for a lambic) of the fresh Iris was just too much.

    i had a 2005 iris that just blew my mind.

    back to CDC, has anyone aged one like 5 years+? results?
