Damnation aging?

    New to the cellar/aging thing....Should I age damnation? And I just picked up a couple Choc oak aged yettis should I age one? Any ideas?

    Have you tried them fresh? What do you expect by aging them?

    It's pointless to just buy bottles and store them away because it's the "in thing to do". Try the beer. Decide what you like about it. Decide if you want the flavor profile to change, and if so, how. Then come back.

    Do not age Chocolate Yeti. Gets weird and chalky in time, delicious fresh though!

    IMO aged damnation is excellent. Somewhere around 2 years I like but that was also for older vintages.

    This is one beer that I really enjoy fresh, but decided to put a couple bottles in the cellar to see what happens and see if I like it aged. I'll probably give one a try in another 6 months or so.

    Popped open a 2012 Damnation earlier this week. It's been cellared since I bought the bottle in February 2012. Batch 72, 2 yrs in cellar. Cork pops, clean golden pour, large fluffy white head, that lingers around and laces the glass nicely. Aromas & flavours of honey, banana, cereal, subtle clove. Nicely drying on the finish. Aged well.

    Also opened a Redemption (Batch 011), bought at the same time. Was just as good as Damnation.
