    Not rehydrating is for people who underpitch but desire a little nutritional yeast in their beer. And it's "mwahaha," with a w.

    Here's my thought about not rehydrating... It's not just a pitch rate thing. It's also a yeast health thing. If a process kills half of the cells, what's it doing to the ones that survive? But if Brulosophy says it doesn't matter, who am I to argue?

    FWIW, I rarely use dry yeast, and then it's for non-malt beverages, so I don't have a dog in this fight or direct experience. Just an exercise in logic for me.

    That is a really good point, never thought about it that way. With that said, I have not noticed a difference when I rehydrate vs. not with US-05, but I also tend to make small beers so maybe it is not as critical. Someone should do an experiment :slight_smile:
