Danstar Belle Saison and BRY-97. Who's using them?

    What he said...but I don't think it floccs out as clean as others (used maybe a dozen times, tends to clear halfway through a fresh keg). Definitely fruitier and creamier/fuller mouthfeel than Chico. Similar to Vermont Ale yeast IMO, but not as pineappley.

    I mainly use dry yeast and get great results and attenuation! I just don't buy into the liquid yeast is better than dry, from my own results.

    05 and 97 are my 2 go to yeasts for IPAs. I use 05 around 2/3 of the time and 97 the other 1/3. 97 is perfect to change the flavor profile up and I think works great with the more pungent hops like Simcoe, Summit, Apollo, etc. If I want a clean hop profile I still go with 05 though.

    I did a couple saisons this past summer with Belle Saison, I found the yeast to be "simple". If you are looking for a no-brainer saison and don't want to bother with 3711 and a starter, then this might be your yeast. If you are looking for something even remotely close to DuPont, then move on. I won't bother with Bell Saison again.

    I like 1272 more than 1056/US05 so I am very interested in trying BRY97

    Anchor Liberty first brewed in 1975. Their porter was brewed first in 1972. Not sure if they used the same yeast. Yes, more British.

    When you say "logged from a Newark brewery," where is this log?

    If we search the ARS NRRL Collection for cultures deposited by Ballantine, we find the following accessions:

    You can search the collection by genus, for example it looks like there are 13 Brett samples (more under Dekkara). A couple came from bottles of Canada Dry ginger ale and one came from Dr. Pepper. Neat :slight_smile:
