Dark Saison w/ Yeast Bay Saison Blend

    has anyone had any experience using this yeast with dark wort?

    i've used it for regular saisons and even ipas with great results and decided to try my luck with a dark saison. after cracking my first bottle i'm amazed at how tart this batch turned out. on my other batches i've gotten a certain amount of tartness, as you'd expect with a saison, but this is berliner weiss tart or even more so than most examples of the style. i'm wondering if a dark wort could really bring out such factors or if it was infected. i only ask because its friggn delicious, lacking on the roast and dark malts but pleasingly tart and hoppy (equinox) and would love to re create.

    I haven't used Yeast Bay Saison Blend, but if your saison is truly "berliner weiss tart or even more so than most examples of the style," it sounds like Lacto got involved.

    If not...another thought...how do you control your mash pH?

    yea that's kinda what i was thinking but was still holding out. i use acid malt in the mash to bring me down to 5.2ish but don't think i did on this batch as the carafa brought me close enough.
