So I'm using just a basic mini fridge as my cellar for now since it does seem to run at a consistent 50-55. Living in Southern California where the whether is either too warm or too unstable to cellar in a closet, what have some of your cellars evolved to over the years?

I just use my hall closet in the center of the house. I placed a thermometer around the house in various potential cellaring areas to find where had the most consistent temperature.

Cellaring Evolution: cardboard boxes in a dark closet --> wine cooler kept @ 50-55C in my room --> off site temp controlled storage

Future Evolution: bumping up off site storage space to accommodate for purchasing at a much higher rate than consumption

I'm using a couple of cardboard boxes on a cement floor in the corner of my basement. I'll be moving to more durable boxes soon and have been thinking about building some shelves soon. I feel like I'd dig into my cellar more if I could see my bottles on a regular basis.

Unused closet in the middle of the house, and have some at my girlfriend's as well.

    No cellar.
I buy a few Parabola's each year and finish the last one right around when the next batch comes out, same with Abacus, Eclipse, and any other limited releases that I want to enjoy throughout the year.

Like most BA's I started with a box in the closet and have slowly worked my way to a better accommodations for my bottle friends. I know have a large wine fridge holding just under 200 bottles and over flow in a chest freezer with a temp controller that is mainly used for fermentation. Living in Orange County the temps are to volatile to not have a controlled set up.

I use a mini bar that opens and shuts and can hold a good amount of bottles
