Devil Dancer

    Has anyone played around with aging Devil Dancer? I know the beer gets mixed reviews, but i have two bottles and was thinking of drinking one fresh and putting the other down for awhile. I like barleywines, so i guess im hoping it would turn into something of the sort. If anyone has any experience please let me know what you thought of the results. Thanks

    In the past I have cellared this beer with great success. Still have a couple sitting around from many years ago. It did, indeed, turn into an American Barleywine-like beer.

    Disclaimer: I have not cellared anything from the last few releases. This is because, to my tastes, the hop flavor became more oniony. My instincts tell me this is not a flavor that will evolve in a positive way over time (again, for my tastes). And I do like the onion flavor that some of us get in some hoppy beers. But some beers have a fresh onion taste, and some have an over-ripe/rotten onion/vegetal thing going on that I don't care for.

    It's an onion bomb fresh, can't imagine it getting any worse with age.

    Had one that was properly cellared for a year (it sat in the basement of a vacation home for a year without anyone opening the door....ha.). I wasn't overly impressed and thought it was a little too boozy

    I've tried 1 & 2 years and I didn't much enjoy the stale onion profile it developed. My opinion is if you don't like it fresh, aging isn't going to change your mind. I considered it a cellar fail.

    I'm currently sitting on a couple bottles from last year as an experiment. Keep your eyes peeled for the June 2014 Cellar Reviews thread, OP. I'll give a review of the beer at a year old.

    Had it fresh and have had one 1 yr old. Fresh kicks ass, cellared was definitely sweet barley wine like but fresh in my opinion taste so much better

    I've had good luck with aging one or two years. None last any longer around my house - my wife love's the stuff!

    Cellar it for a year or two, you won't be disappointed.

    Drank one fresh and was not a fan. I let another age for a year and I liked the change. Took on a barleywine taste and appearance. Wish I had another to let go for another year but even one year was a vast improvement

    Aged DIPAs do not turn into Barleywines. That said, I like aged DD a lot. It keeps plenty of bitterness after even two years and I think is lovely at any age.

    Great to know I definitely plan on cellaring my remaining two bottles to see what they do as I really enjoyed DD.

    Had a fresh and a 1 year old last weekend. The older one was a bit sweeter. *shrugs*

    I had a 2 year old one and it was AWFUL. That said, the reason I aged it was because I disliked it fresh and couldn't bring myself to drink another. So my opinion might be biased, but I felt it only got worse
