DFH Palo Santo Marron

    Has anyone had any positive results sitting on this?

    I remember it being a pretty big, complex beer, and I like how WWS does with a little time. Just wondering if it would yield similarly positive results.

    Drank a 2012 a few weeks ago, really good. The sharp, woody flavors have mellowed and once it's come up to room temp those last few sips are amazing. Picked up 12 more bottles to start the process again.

    It will be mentioned elsewhere, but I feel like I have never been able to age it long enough to find the peak for this beer.

    I still have two 2008 bottles, which I believe was the first bottling of the beer.

    Not sure about peaking, but 2.5-3 years does a lot of good for this beer.

    I just cracked an 08, bottle date 04/16/08, which I think is the original bottling of this beer. (?) I've been holding on to it for a special occasion, which I finally decided was a rainy "blow off my outdoor job" Tuesday early afternoon. I can say this beer is drinking fantastic. I was wondering if oxidation would have taken over and made it unpleasant, but that's not the case whatsoever. The wood is still there but not nearly as upfront as fresh, overall a very smooth, chocolatey delicious barrel aged beer.

    Would highly recommend giving one a try for anyone like @pmoney who may still have a bottle, and will say that this is one of the very few beers through my extensive cellaring experience that actually is worth holding on to for more than a couple years.

    It's good at a year and a half. I love it fresh and also but haven't gone any longer than a year and a half.

    Sam spoke at Beervana Fest here in RI and specifically mentioned Palo Santo as an affordable cellaring beer; I'd call that pretty decent authority. Within the DFH lineup, I've also been impressed at how well Olde School holds up and evolves.
