I am an extract brewer looking to create a new Session IPA recipe. In all my past APA/IPA recipes, I've used Briess Lite LME as the base malt and added some Crystal/Caramel Malt for steeping. I have had a number of craft-brewed beers in the past that used Maris Otter for a large portion of the malt bill, and I have (for the most part) loved them all. As a result, I am interested in creating a recipe that uses Maris Otter Lite LME in place of the standard Briess Light LME that I normally use

didn't mean to hit "post reply" yet. To continue my post above:

I typically use the recipe builder tool on BrewersFriend.com to create my recipes, but it only allows you to select "Lite LME" (as opposed to "Maris Otter Light LME") My question is: how will my results be impacted by using Maris Otter Lite LME instead of the standard Briess Light LME? Will the OG or FG be impacted? What about the color? Is SRM different? How will the flavor differ from that of the Briess Light LME? Will the residual sweetness be impacted? Will I need to adjust the amount or type of steeping grains or other ingredients due to the difference in base malt being used? Any thoughts or suggestions would be appreciated. Thanks!

I think there are two maltsters who make MO LME, Muntons & Crisp. The malt is definitely a little more 'toasty' and full bodied compared to Briess LME, so you don't really need much, if any, crystal malts. I know the Crisp version is rated at 4-5 SRM, with 1036 ppg. Haven't checked Muntons, but should be similar. You could start with just a basic pale ale or esb to get a feel for it.

I have never seen pure Maris Otter Extract, but they may make it. Most light extracts are a combo of 2-Row and a little light crystal malt I believe. Check with Briess.

Thank you. The MO extract to which I'm referring is Munton's Light LME. You mentioned that it is more full bodied than Briess LME. Since I am attempting a session IPA, would you suggest adding dextrose, rice, or corn to lighten the body, or do you think I'd be okay with just using the extract with a small amount of crystal? Should I eliminate the light DME addition to keep the ABV and FG low? Thoughts or suggestions?

nah...i would say just use the Muntons LME and nothing else for a session IPA (sorry overlooked that part in your OP). It provides a little more malt backbone to the beer, but shouldn't be overwhelming. Maybe 8# of the MO LME and hops of your choice...sounds like the start of a good beer in my book.
