I was thinking of picking up a few bottles of each this week, some to drink and some to cellar. I already have a vertical of Stone IRS that I'm working on and was curious to see from peoples' experiences if Stone Espresso IRS cellars just as well as the regular IRS.

Espresso IRS literally just came out. No one has ever cellared it before as it is brand new in bottles.

Ah I see, I was under the impression it came out a couple years ago. My fault.

On top of that, general consensus is that since the coffee fades over time you will lose that dimension of the beer, making cellaring it a bit more of a gamble.

I'm not sure if you're thinking about it for this reason but here's just some info. Stone does Odd Beers for Odd Years. Even years get the regular Old Guardian and IRS, odd years get the normal version plus a variation. The variations will probably be unique at least for the next few iterations of the beer. 2011 was Belgo style influenced with Belgo IRS and Belgo Old Guardian.

I have a vertical of IRS going back to 2006 with a hole being 2010 for some reason. It ages great. But I wouldn't bother aging the Espresso version simply because of the already mentioned fact that coffee fades and what's the point of fading the special feature of the odd year.

Not only does coffee fade, but sometimes (usually, in my experience) it turns into this unpleasant chili-like characteristic. So I would say that in general it's really not worth aging coffee beers. (KBS is an example, lots of people age it and I just DO. NOT. GET. IT.)
