Different priming sugar

    So I want to change things up a bit and use honey instead of regular priming sugar....question is, how much honey and water do i need? From what I have seen, it looks like 1/2 cup of each?

    I would recommend consulting one of the priming calculators that handles honey, like this one:

    But I have to mention... the amount of honey needed for carbonating is so low that IMO you're not likely to taste it in the beer. At least not unless you use a really strongly flavored honey variety, such as buckwheat, and then, maybe.

    Also, you may find it difficult to get the honey evenly distributed throughout the beer without a lot of stirring, which you don't want to do.

    I almost exclusively bottle condition my wild ales with honey. I use orange blossom honey. it comes out to about 1 tablespoon per bottle. For about a 5% beer. It takes some time for the beer to come together in the bottle. But has great high carb and mouthfeel once the wild yeast converts it.
