DIPA partigyle-hops help

    You might be in a metal band, but if its not drone metal, you might not be prepared for comet.

    I have been trying to figure out what to do with Comet since I have read a lot of mixed comments about it. Munich along with Columbus and Comet sounds like it might work.

    Try adding 2 drops of Lactic Acid from a pipette (like the one used for refractometer readings) into a small glass and maybe an 1/8 tsp of Gypsum, and mix into a paste. Add a touch of the beer to get it dissolved, then add that to your empty pint glass. Pour the rest of your pint on top and make sure it mixes. Try drinking that pint and see what you think about the hops.

    I say this because I have had some beers that seem kind of flabby in the finish and adding a little acid to the glass lowers the pH and makes it pop nicely. Gypsum should add more punch to the hops as well. If it works you can scale up and add to the keg or each glass if you bottle.

    I finally had a chance to try adding some lactic acid to the APA. I started with 2 drops out of a baby medicine syringe (no pipette in the house) in ~8oz of beer, no real difference. So, I added 5 more drops and there was a noticeable "twang" from the lactic but the hops were still "muted". I then topped off the beer (~16oz total) and the twang went away but no real improvement to the hops.

    If the kids cooperate, I'll try a little gypsum next time.
