So, I've seen plenty of discussion regarding whether this beer will continue to develop/sour and often the centerpiece is the advent of flash-pasteurization at the brewery status post '09 Abyssident and others. I have always had good reception from the Deschutes team, so I figured - why not just ask them directly. Here is the text from my email: Message: To Whom It May Concern, I recently had a discussion about one of the beers from the Reserve Series with some friends, and we had some questions regarding The Dissident, as well as your upcoming release of Conflux No.1. You've always been great at communication in the past, so I figured I'd ask the source. 1) Is Dissident filtered? Yes Pasteurized? No Are there live yeast/bacteria in the bottles? Yes I know with a Flander's style, one can often expect Brett, or even some Lactobacillus in the barrel, but I'm wondering if you have initiated pasteurization of this beer as well. Finally, if pasteurized or filtered from barrel, is there yeast re pitched for bottle conditioning? Depends I guess what I’m trying to figure is if the bottle is live for further maturation/souring. Yes it is. 2) Conflux No. 1: when will this brew be hitting shelves? Late April to mid May – no exact release date yet… Where can I find more info on the beer? There will be lots of info up on our website after the release and probably a blog about it too What exactly is it? All barrel aged beer of Hair of the Dog Adam and Fred, and Deschutes Brewery The Stoic and The Dissident blended together!! I understand if you are not releasing this info at this time, provided I haven't actually seen much publicity on the subject. Hope this helps clear up some confusion for folks (I know I had some). cheers harry
So I'm going to have to give my 2010 Dissidents more time to become more like that 2008 we tried side by side. There was definitely a noticeable difference between the two.
