does anybody use wlp 380?

    I like what i've read about it being phenolic. I've read that it puts off a pretty high sulphur level. do i need to do anything special with this yeast? I just started researching it. I got a recently expired vial this week and I was going to make a starter, freeze it, then use it later down the road.

    Unless you're a microbiologist and you know how to do it properly? Don't ever freeze your yeast (from a starter or otherwise)!

    380 is a great strain, fwiw.

    It definitely needs to be underpitched or else it ferments a bit clean. Consider not making that starter after all!? Don't worry about sulfur, that has not been a problem for me. Even if you did see some sulfur, it will be gone in a couple weeks after some conditioning. But I have not found that to be necessary. Also... careful freezing so as not to kill it.

    I love 380 and use it in this recipe. I go back and forth on the starter question for this yeast. If you pitch too much it can almost turn out like an American wheat ale but if you hit it just right the flavor is amazing.

    Realistically, I haven't brewed many hefes, so I have not really dialed in any particular yeast. In my experiences, I preferred wlp300 for reasons opposite yours. I don't like the way 380 tipped towards phenols in the one time I used it and have preferred the balance towards esters in the 4-5x I used 300.
