If cans really do age better than bottles, what keeps breweries from canning all of their beers? Aren't cans cheaper than bottles? I wouldn't mind seeing a 22 oz can of Bourbon Barrel Stout.

There isn't any great data either way and it certainly won't affect the beer's taste, but I'd still be concerned about BPA leaching over extended periods (I'm talking years). I know that Ball is working on BPA-free cans, however, which would be a great aging vessel.

Ok...what am I missing here? I am not a "person of science" so one of you "science types" perhaps will be so gracious as to educate me or correct me. However, I would think that it is, literally, impossible to age a beer (or anything else) that is canned.

Very simply put, "Aging" is simply another word for oxidation. "Aging" in wine, beer, meat, cheese, etc. takes place when oxygen and time "have their way" with the product and change the product.

So, my conclusion is that nothing "ages" in a can. Yes, it gets older but it is not likely to change. Ok you scientists...now tell me why I'm just full of crap. (I'll listen....really....)

I don't think we'll be seeing any canned sours anytime soon... from what I've heard from brewers, it's basically impossible to get the sour taste out of the equipment after canning a sour or Berliner and trying to go back to a normal beer. You have to have a completely separate canning setup to do it.
