Does temp matter when aging vanilla beans?

    Planning to add some vanilla beans after fermentation is complete and letting it condition for 1 - 2 weeks, depending on how fast the vanilla flavor imparts. I plan to keep the beer in the primary vessel. Due to my fermentation set up I can only control the temp of one beer. Does it matter what the temp of the beer is?

    I can either leave the beer in the fridge at @38 degrees or leave it in my garage. My only concern is the only infection I’ve had is when I delayed pitching my yeast and the wort sat in my garage at least 24 hours or more. The beer started fermenting. While, this situation is much different there is a little hesitation letting the beer sit in my garage for a prolonged period of time.

    Worst case I assume the vanilla flavor make just take longer at a lower temp.

    Why not make a tincture at whatever temp you want and then add to a keg or bottling bucket?
    Personally, I'd just add a high quality extract to the keg.

    I plan on adding bourbon so tincture maybe the way to go

    Yep, do this. Just split a bean, soak it in the bourbon you plan to use, and let it sit in a warm spot for a month

    I like doing it yourself on a lot of beer/brewing things. Commercial extract can and does work. Using vanilla beans will give a different vanilla taste and what I did was get 3 different types of vanilla bean, made 3 different tinktures and use the one I like best.

    Just beans for thought.

    I can't remember what I paid at the grocery, but a quick Google gets the 2 oz. bottle for around $6 and the 4 oz. for around $11. That sounds about right.

    How much do general use for a dark beer like a stout or porter?

    I hate to give you this answer, but "it depends upon how much vanilla character you want."

    Since I only bottle, I have a graduated medicine dropper that I use to dose each bottle. If you keg, you'll want to take out a measured amount and play around with different dosages until it's at the right level for you and then just do the math for the whole batch.

    As a Scientific Brewer I always use a volumetric flask,,,, ahhh, no,, I don't . I pour in around a couple of shots worth. Some guys I do know measure out 2-3 oz,, but Jesus is right depends on wither you want a vanilla bomb or some to blend.

    The M Shell Christmas stout got the couple shot pour along with 6 oz coco nibs 4 oz hard maple wood and 4 pieces of cinnamon bark for 7 days. Standard 6.8 abv stout recipe.

    I had 2 last night and while the nib flavor is dominant some vanilla shines thru. In time the vanilla gets stronger in my opinion.

    What's your preferred dosage rate? I have a delicious imperial stout that's coming into its own and I'm going to play around with dosing it with vanilla, some fresh cold brew, etc., for future batches with adjuncts.

    I'd have to check my notes, but, depending upon the beer, it's a couple milliliters per 12 oz. bottle.

    Not organic, but Costco sells a 16 oz. bottle for ~ $26...if you use a lot of vanilla in other things, too.

    That's a metric asston of vanilla extract. I bought the 4 oz. bottle and have used it in a couple beers plus some food dishes and I still have about half a bottle left.

    I make my own extract/tincture. Six mexican vanilla beans into a half pint jar and topped up with rum. Dark rum. Nomnomnomnomnom
