How about the annoyance you get when you see no bubbles the next day and realize you forgot to pitch the yeast! (yes, I've done that)

To make it worse, the last time I did this was for a huge barleywine that was supposed to end up as a 1.124 monster... as a 5 gallon batch... but I got carried away chasing malliard reactions and boiled it for 3 hours leaving me with ~3. Gulp.

Online estimator put the potential alcohol between 16-21% (wlp099 goes to 25, so that's possible!) depending on my efficiency. But I'll never know for sure. All I know is the sample I tasted was pretty hot.

I really need to leave the enjoying home brew while making home brew OUT of brew day. Too many times I woke up the next day with a hellatious headache and 2 buckets bubbling away wondering how the hell they got there!!!

I was honestly surprised at the comments saying something to the effect of "I'm glad when I'm done and can crack a homebrew"!!!
I crack a homebrew when I start the process!!!
