dosing a 1 gallon batch with brett at bottling

    Hey everyone,

    I've done plenty of brett beers in primary and secondary, but have never used brett at bottling. My first experiment with this will be with a small 1 gallon batch of pale ale (SNPA clone but dry hopped with 1 once of simcoe). I've just dry hopped the beer tonight and will sit on it for another week, and the beer it already down to 1.009. OG was 1.048.

    Now, a typical 1 gallon batch only yields about 8 or 9 12" beers, so here's my plan: collect dregs of 2 Orval beers into a (starsan) sanitized shot glass, bottle the beers, then drop a few drops of Orval dregs into each 12 ounce bottle, along with 1 fizz drop in each. I'll be using Orval empties so I feel pretty good that I won't have bottle bombs on my hands. I plan on bottle conditioning the beer for about 3 months before trying the first one.

    Questions:

    - is this sound methodology?
    - will a few drops of Orval dregs per 12" bottles provide enough brettanomyces to get some funk going?
    - will the starsan have any effect on the Orval dregs? It should not, correct?

    Any advise, tips or tricks appreciated, as always.

    I've used the equivelant of that much Brett for a 5 gallon batch that is howing character at only a few months. I've used Orval dregs as well as fresh Brett Trois.

    Orval dregs are great. I've been using them since 2 months and haven't had any complaints regrading to it. Though you need to keep a check on the amounts of it, otherwise it goes on very well.

    Thanks for the feedback so far. I've had success in the past with Orval dregs as well, but have never used them at bottling. Did you? How do you determine how much dregs is enough? Or too much? Will using two drops of Orval dregs at bottling + one fizz drop cause a risk of bottle bombs for a beer currently at 1.009? Anyone here have any specific experience of using brett dregs at bottling? Thanks again.

    Is there a reason that you aren't adding the dregs and premeasured priming sugar to the bottling bucket? Even if you are splitting the batch (some w/, some w/o) prime the entire batch, bottle, when you have 1 gallon left in the bucket, add the Orval dregs (1 bottle should suffice), mix gently, continue bottling as normal. If you are set on doing it in the bottle itself, prime the whole batch, bottle it all, drop 2 drops of dregs in each of the bottles you want to add it to, then cap. I see no need for the fizz drops. 1.009 and Brett should give you plenty carbonation.

    I do have experience with Brett dregs at bottling, but I always add them to the entire batch. Mad Fermentationist did a test batch using a dropper and adding Brett to bottles only of different strains on his Belgian Single here. Looks like his got 10 drops per 375ml bottle.

    The whole batch is only 1 gallon. I don't use a bottling bucket (go straight from carboy into bottles) and therefore I always use fizz drops. Thanks for the link. Maybe Mike will chime in here and provide some feedback on what his results were.

    For my Orval clone I always add 2 drops of brett brux per 12 oz , just before the cap goes on. It works out good.

    I am fortunate to run across this post, in about two weeks I'll be bottling my Belgian Pale Ale and am seriously considering priming a few bottles with Orval dregs. After a lot of searching the closest I've come to what I consider reliable information is this post on the Mad Fermentationist: http://www.themadfermentationist.com/2012/08/bottle-conditioning-with-brett-belgian.html

    I actually plan on priming with a yeast slurry of sorts provided by a decanted 1L starter using 2 bottles worth of Orval dregs, and another 1L starter using dregs from a Jolly Pumpkin beer.

    My current dilemma is whether to use priming sugar and how much. General consenus ranges from "use priming sugar and bottle in champagne bottles" to "don't use priming sugar and 12 oz bottles is fine" I'm curious to hear people's thoughts.

    I would use a normal amount of priming sugar. The how much I pay attention to is the brett. As I stated above, 2 drops per 12 oz works for my orval clone. I even go heavy on the sugar because most of my beers are high gravity and can be a problem to carbonate.
