We're going live on YouTube at 3pm Chicago time for a virtual brewery tour to raise $ for our local food pantry -- Bill & Hagen are a lot of fun (they are the brewer / owners), and there's a lot of things in our brewery you don't see in many American breweries. Steal your face stout - if you’d have picked up the tin tacker I’d have accused you of being ME in my DREAMS lol! Great pickup, I’m looking to grab all 4 selections you grabbed, plus the Kolsch glass.

I believe the chicagoland lager thread mentioned Dovetail is out of pilsner, rats! I didn’t make it to Dovetail this past weekend as I wanted (got a newborn at home), however I’m DETERMINED to make it to Dovetail for some to-go beers sooner than later and I will be actively seeking out all 4 of these options!

 

@OleWorm any updates for us on Kolsch distro? These temps got me craving a fridge full of the stuff!

 

3 weeks-ish until Kölsch distro (it will be a newer batch than what's in the taproom rn); Pilsner won't be back til August. That one went fast!

 

Pilsner was excellent and I'll look forward to picking up more come August. Love that the Kolsch will be in the regular lineup now. The surprise for my was the Maibock, just didn't expect to like it as much as I did. There's a touch of smokiness that I'm really diggin.

 

Thanks! That smokiness comes from the yeast we used -- it was part of a previous pitch for a Rauchbier we made a couple weeks earlier, so the slurry picked up some of its smoke when it was used in the Maibock (this is how Schlenkerla makes their helles). It's not enough to warrant calling it a smoked bock, but if you're sensitive to those types of phenolics, you'll pick it up (some ppl don't notice it at all). Our Maibock changes a bit from year to year, making it "our"bock haha. Glad u liked it!

 

So, funny story - here I was pinin' for all the Pilsner and Maibock talk these last two days, and wishing... and then today: BOOM. Thanks @77apm !

 

EVERYONE needs a Dovetail dealer. Facts. Even Lori Lightfoot would approve.

 

I bought the brewers dozen and am not sure it’ll be enough. Now knowing we wait until August I’m certain.

 

So I've never been to Dovetail. @OleWorm what days do you anticipate being open again for taproom draft pours?

 

Thanks for the updates Ole Worm, I supposed I’ll shift my plan to grab Kolsch at Binnys and then take a visit to taproom in August when Pils is re-released...

Btw, quick question - are you guys ordering more Yellow Dovetail shirts for sale?? I loved those and they seemed to be out of stock when i visited the taproom last summer. I need to snag a yellow shirt and a tin tacker!!

 

Not anytime soon. Exploring other options. But one day, we'll pour draft beer again ...

As for yellow shirts, I'll mention the request to our merch ppl.

 

I had the Maibock over the weekend and loved it...and I didn't get any smokiness, which I'm glad for since that's not something I like in my beers. (But now that it's in my head, I'm sure I'll taste it in the next can I have)
