According to the ratebeer description, it is bottle conditioned. That means the yeast might still be viable. Doesn't mean the used the same yeast for bottle conditioning as they did for fermentation.
^This. The beer itself is pasteurized. However, "bottle conditioned," by definition requires live yeast in the bottle. So yes, the dregs are living yeast, and oh, so yummy.
Oddly enough, just drank a bottle of this last night. As with a lot of Belgians/bottle-conditioneds, I prefer to leave that sediment in the bottle when I pour. Living or not, it just doesn't look all that appetizing
