Drink now or let it be?

    I have been cellaring for awhile. Actually since i started on this website awhile ago. I am just wondering if I should let these bottles keep aging or drink them. Here is the list!

    KBS is best after about a year IMO. Drinks the Southern Tiers. Most things with espresso I wouldn't let go too long because the espresso flavors are going to fade. It may develop other characters though and can still be amazing down the road. Same with pumpkin beers...no sense in aging them because they lose the spice. Drink the Stone Porters and black ale.

    Things for long term aging:
    King Henry
    Old Rasputins
    The Cantillons I wouldn't open for a long time, 5+ years.

    had a bramble rye yesterday - amazing if you can appreciate a high ABV, jammy fruit forward rye whiskey aged imperial stout. that beer is good to go now.

    If you have multiples of something you haven't had start with those, make notes and try the others at different intervals. It is fun to see how they change through the years.
    I don't cellar nearly as much any more only because I have come to like the "crispness" I find in fresh beers.

    I had a 2012 KBS recently and didn't like it at all compared to 3/15 the day it got released. It was still great, but fresh it was mind-blowing.

    I sipped some KH at a tasting over the weekend, and was not impressed. Several beers out shined it, and if I had one, I would sip it now, or get rid of it, probably the latter.

    I dont know but I have been enjoying some aged Dark Horse Black Ales. So I thought why not.

    There wasn't really anything wrong with it, it just didn't seem to hold up that well. It was part of a tasting involving several sours, so my palate might have been wrecked, but the complexity faded considerable. Just my two cents, though.

    Since it seems like a highly sought after beer, I would probably send it some where else rather than sit on it.

    As far as the NG Enigma goes I would not cellar that on purpose... I also have about a case but that is just so I have a supply untill Dan hopefully brews it again. Serendipity is year round and well I can not imagine it doing much. Old Rasputin also does not do anything imo.

    I don't think Serendipity will evolve into anything different than what it is now but I'd bet it'll hold up for a while as raspberry and Belgian red do the same. Also drink Pumpking. No experience there, just assuming it wouldn't be that great anymore. Could be wrong though. Wouldn't be the first time :wink:

    Its year round until Belgian comes back right? Anyways I will see how long the enigma lasts lol such a great beer.

    Put it in the fridge. Aging it a little bit would take out the sweetness of the hazelnut though wouldnt it?
